Fatayer:

2 tsp dried yeast
1 tsp sugar
1/2 tsp salt
2 cups all purpose flour
1/3 cup vegetable oil
1 cup lukewarm water
In a small bowl, add the yeast and sugar to the water. Set aside for 10 minutes. Place flour in a large bowl. Drizzle with oil; mix and rub with your hands until smooth (about 5 minutes). Add salt to yeast, pour over flour and work into a dough. Knead, adding more water if needed. Place in a bowl, cover and set aside to rise in a warm draft-free place for one hour.
Punch down dough, roll small balls of dough into circles. Brush with olive oil, spoon filling* onto the centre, spread. Bring two opposite flaps together and pinch to seal. Bake in preheated(180 C) over for 15-20 minutes until golden brown.
Makes around 10.
*Filling: Zaatar, halloumi, sliced sausages, shredded chicken, chopped olives, mayonnaise, mozarella, shredded mortadella. Mix and match.

What part of Visayas? Ay, ka nami! That's "Oh, how nice" in Ilonggo/Hiligaynon dialect which I understand very well and speak adequately. They cook very well there. Know any dishes? :-) |

Cebu , but i'm not crazy for their dinuguan . Best adobo I've ever had though |

this is a typical italian starter
ingredients:
white bread
garlic
extravergine olive oil
tomatoes
oregano
1 - bake the withe bread in the oven
2 - take the garlic and rub it on the bread
3 - chop the tomatoes in little pieces and put them on the bread
4 - put a little bit of olive oil
5 - put some oregano
and well have a nice bruschetta!
hint: eat it when the bread is still hot. |
