sounds delicious !

one of my fave : Greek peasant style lamb

put some diced lamb in a oven dish
add some cubes of feta cheese
top with peeled and diced tomatoes
season with salt and pepper and sprinkle olive oil all over
back in a moderate oven until tender

serve with a big bowl of salad and plenty of red wine

so simple but soo yummy !

Ben Swifts ',Buffalo Chicken Chili - this recipe will make about 3 gallons

10 lbs chicken (breast is best)
3 large white onions (the big ones)
6 jalapenos (cut off the ends and take out the seeds)
6-10 celery stalks
1 clove of garlic
6 cans of red beans
3 cans of white beans
3 cans of corn
1 big can of chicken stock
3 big cans of tomato sauce
1 bottle of buffalo wing sauce (or straight red pepper sauce)
2 tbsp ground cumin
1 tbsp corriander
unsalted butter

dice up all the onions, jalapenos, celery
press the garlic
cook up all the chicken, kind of pan-fry it with the butter, chop it up as you go, or shred it, either way is good

once the chicken is cooked, add the diced stuff and the garlic
add the cumin and corriander
add 2 cups of the hot sauce (more or less)
add a little chicken stock if it is getting dry at all
mix it all around so it's good and cooked

get a really big pot, or 3 crock-pots
drain and wash all the beans and corn
put all the tomoto sauce in the pot(s)
put the chicken stock in there too, stir it up a little
add all the beans and corn, mix it up a little

add the chicken mix to the pot(s) stir it up real good this time

cook on low heat for 3-5 hours ... stir it once an hour to make sure nothing gets burned to the bottom of the pot. if it starts drying out, add a bit more chicken stock.

if you want it hotter, add the rest of the hot sauce!

Hot damn! I'm very impressed that you know 'dinuguan'! Never thought I'd encounter anyone here who knows this dish. Most people I know are repulsed when they find out what's in it. Can't cook it to save my life, but I know how it should taste ;-)

Ric, your chili recipe sounds delicious. I've never had chicken chili before.

How is your kitty doing by the way?

Sorry to hear about your kitty. Hang in there. Been through the same with an old kitty with chemo and everything :-(

Anyway, I guess I've struck out again. Can't cook either Ilocano or Pampanga style because I'm Tagalog... and proudly so.
